Pasiego Aurum, un vino blanco entre los tintos de Bodegas Pasiego

La semana pasada en Alzira Radio, tuvimos la ocasión de catar Pasiego Aurum, un vino blanco entre los tintos: Se trata de un coupage de Chardonnay y Sauvignon de Bodegas Pasiego (Sinarcas, Valencia) y con sello DOP Utiel-Requena.

Bodegas Pasiego, una bodega familiar

Esta semana nos acercamos a una bodega familiar donde llevan algo más de 20 años elaborando vinos de calidad casi en el límite entre Valencia y Castilla La Mancha. Las 15 hectáreas de viñedo de la familia Pasiego se encuentran a 900 metros sobre el nivel del mar. Su perseverancia les hizo creer en sí mismos y en la posibilidad de hacer vinos de calidad en el marco de la Comarca del Altiplano.

Basan su filosofía en obtener bajas producciones, y que las plantas no tengan mucho vigor. Justo antes del envero, realizan el ‘aclareo’: una práctica que consiste en dejar cada cepa con su producción idónea, racimos distribuidos a lo largo del cordón de manera espaciada lo que les confiere aireación, fundamental para garantizar la salubridad del viñedo.

Cuentan con la inestimable ayuda del patriarca de la familia, César, un agricultor que lleva en sus espaldas más de 40 vendimias. Toda una vida dedicada al campo. Así como también, de Julieta, su madre, que dicen es la mujer más dulce de toda la Comarca. Y en su honor, podemos encontrar un vino blanco botritizado del mismo nombre que ha sido laureado por los críticos de paladares más exigentes.

Elaboración de Pasiego Aurum

Este vino blanco es un coupage de Chardonnay y Sauvignon. Se vinifican por separado y posteriormente, se ensamblan las dos variedades.

Previamente a la fermentación, se despalillan y se realiza una maceración peculiar de 24 horas con un prensado suave. Posteriormente, se realiza una maceración prefermentativa a baja temperatura durante 4 días, con lías. Esto ayuda a la extracción de aromas, a la vez que esas lías le confieren cuerpo y estructura al mosto.

Después, se produce la fermentación alcohólica a temperatura controlada de 18 ºC con la finalidad de preservar los aromas obtenidos.

Parte de la variedad Chardonnay culmina la fermentación en barrica. Y reposa con sus lías durante 7 meses.

Por su parte, la Sauvignon no lleva barrica, protegiéndola así de la oxidación en todo momento, dado que la variedad Sauvignon blanc es una uva que se oxida muy fácilmente.

Notas de cata de Pasiego Aurum

Vista: Amarillo pálido con ribetes dorados

Aromas: Es complejo en nariz, intenso con notas exóticas, especiadas.

En boca: es redondo, untuoso, goloso, y grandísima persistencia.

Maridaje

Todo tipo de pescados, y con arroces de pollo y conejo.

Graduación 13 %. Temperatura de consumo entre 10-12 ºC

Conclusión

La temperatura juega un papel clave en el consumo de este vino, ya que tomarlo muy frío, penalizaría sus matices. Además, a medida que coge temperatura en la copa, está todavía más sabroso. Esto es debido a la evolución que tiene, el cuerpo, la estructura… Hay que tomarse tiempo para disfrutarlo.

Aurum es un vino untuoso, amplio, que se puede saborear tras su paso por la boca y que, además, resulta cremoso. El glicerol, un alcohol que surge durante la fermentación es el responsable de esta sensación untuosa, que también hace que se aprecie en la copa cuando el vino cae más lentamente. El final nos deja una boca muy muy larga, persistente y con un cuerpo que perfectamente marida con una carne también.
